The perfect pizza dough

Vegan pizza recipe (1 to 4 pizzas)
Ingredients:
1 Pizza
- 1 1/2 cups AP flour
- 3/4 tsp dry yeast
- 3/4 tsp sugar
- 3/4 tsp salt
- 1 tbsp olive oil
- 1/2 cups warm water -
- 2 1/2 cups AP flour

- 4 cups AP flour
- 2 tsp dry yeast
- 2 tsp sugar
- 2 tsp salt
- 2 1/2 tbsp olive oil
- 1 1/2 cups warm water
- 5 1/2 cups AP flour
- 3 tsp dry yeast
- 2 2/3 tsp sugar
- 2 2/3 tsp salt
- 3 1/2 tbsp olive oil
- 2 cups warm water
- 1/2 cup tomato sauce
- 1/2 cup crushed tomatoes or 2 tbsp tomato paste
- 1 garlic clove
- Salt to taste
- Pinch of sugar
- 1 tsp oregano
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- dash of black pepper
- 1/2 tsp olive oil
Cooking instructions:
- Heat up water to 60 degrees, then add cold water to it and test it on your hand. You want it to be warm, not hot or cold, so the yeast can do its work.
- In a mixing bowl, mix all-purpose flour, dry yeast, sugar, and salt.
- Add olive oil and warm water. Mix everything together with a spoon and then with a wet hand. Cover the bowl with a kitchen towel and leave it in a warm and humid place for 2.5 hours in 4 stages.
- After each 30-minute rest, strengthen the dough by stretching and folding it over itself, then flip the whole thing to create a ball.
- Prepare the tomato sauce using tomato sauce or tomato paste or crushed tomatoes and all the spices in the ingredients. Mix everything quickly with a hand blender.
- After 2.5 hours, dust your board with some flour and flip the dough on it. Divide it equally and fold each part on itself and shape it into a ball. Cover the dough balls and leave them for the last 30 minutes.
- Preheat the oven to 250 degrees Celsius. Heat up the tray as well. After 30 minutes, move the dough you're not using and make sure it's still covered and warm. Stretch the dough with your fingers, pinch it with your fingers then pull and flip, stretch and rotate with both hands, or stretch it with your fingers and rotate it.
- Once the pizza is stretched, take the tray out of the oven and cover it with oven paper. Transfer the dough to it, add your sauce and toppings, and bake it in the oven. Put the tray on the lower level of the oven and bake it until it's crispy and golden brown, you can add the cheese at the last 5 min of baking so the dough doesn't get soggy.
