Ramadan sweets (Awama)

Awama - Lokimat - عوامة, لقيمات
Ingredients:
Batter
- 2 cups of flour
- 2 tbsp corn starch
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1 tbsp of sugar
- Pinch of salt
- 1/2 tsp of dry yeast
- 300 ml of warm water
Syrup
- 1 cup water
- 1 cup sugar
- squeeze of lemon or lime
Cooking instructions:
- In a mixing bowl, combine the dry and wet ingredients of the batter.
- Whisk all the ingredients together and cover the batter, setting it aside for an hour.
- After an hour, heat up enough amount of oil in a deep sauce pan.
- Transfer the batter into a piping bag, cut the edge and drop equal parts in the oil using scissors. oil the scissors to stop the batter from sticking to it.
- Fry till golden, remove from oil then re-fry after cooling down till it gets a brown color.
- Heat the water, sugar and lemon squeeze till it's reduced and has a honey-like texture, it will get thicker when it cools down so make sure to take it off the heat earlier than honey texture.
- Roll the Awama balls in the syrup, roll in sugar and cinnamon or cover with chocolate.
- Serve and enjoy.
