Falafel recipe

Ingredients:
  • 400 g soaked chickpeas 
  • 60 g of fresh parsley 
  • 20 g of fresh coriander 
  • 1 medium size onion chopped into cubes 
  • 4 cloves of garlic 
  • 1/3 of a chili 
  • 2 teaspoons of coriander powder 
  • 1 teaspoon of cumin powder 
  • 1/4 teaspoon of black pepper 
  • 1/2 teaspoon of salt 
  • 2 tablespoons of water 
 BEFORE YOU FRY: 
  • 1 teaspoon of coriander seeds 
  •  2 teaspoons of sesame seeds 
  • Salt to your taste 
  • 1/4 teaspoon of baking soda (Only if frying in oil) 
 TAHINI SPICES: 
  • Cumin 
  • Black pepper 
  • Salt 
  • Lemon squeeze 
  • White vinegar
Cooking Instructions:
  1. Soak 400 g of organic chickpeas in water for 8 hours or overnight.
  2. Rinse the chickpeas and set them aside.In a food processor, add 60 g of fresh parsley, 20 g of fresh coriander, 1 chopped medium-sized onion, 4 cloves of garlic, and one-third of a chili. 
  3. Run the food processor until no large pieces are left.
  4. Add the chickpeas to the food processor in 2 patches, each patch might take 5 to 15 minutes to process, depending on the processor and the type of chickpeas used. 
  5. Add around 2 tablespoons of water to help the machine and mix the ingredients every now and then.
  6. Add 2 teaspoons of coriander powder, 1 teaspoon of cumin powder, 1/4 teaspoon of black pepper, and 1/2 teaspoon of salt to the mixture. Mix well.
  7. Shape the falafel with your hand or a falafel tool.
  8. Test your spices by frying one piece of falafel first and then adding more salt if needed.
  9. For deep-frying, find the smallest diameter and deepest pan to reduce the amount of oil needed. 
  10. Test the oil by dropping a small piece in it. Once it's bubbling and floating quickly, put the falafel in the oil and flip them occasionally until they have a beautiful brown color. 
  11. Remove the falafel from the oil and move them to a paper towel to remove any excess oil.
  12. For frying in little oil, follow the same idea as deep-frying but flip the falafel halfway through to have even color on both sides. 
  13. Remove the falafel from the oil and move them to a paper towel.
  14. If air frying or baking in the oven, omit the baking soda and brush with oil lightly on both sides.
