Seitan flavour enhancers (umami)
Marmite
Ingredients:
- 1 kg sourdough bread
- 7 g fresh yeast
- 10 g sugar
- 4 l water
- 1 medium turnip
- 2 sticks celery
- 1 medium onion
- Cut the bread into cubes and roast them in the oven untill brown.
- mix the fresh yeast and sugar in some water to dissolve.
- add the 4l water, yeast, sugar and bread to a large bowl, cover it and let it set for 12 hours in room temperature.
- Remove the bread from the water and squeeze as much water as you can from the bread.
- Cover and let it set again for 2 days.
- Strain the water into a large pot and let it simmer and reduce.
- Cut the turnip, celery and onion into cubes and boil in some water.
- Strain the vegetable water into the reduced marmite and continue to reduce.
- Take the pot off the heat when you reach the desired thickness, the marmite will thicken more as it cools down.
