Meatless balls "vegan meatballs"
Ingredients:
- 1 tbsp mushroom powder
- 1/2 cube of not-beef stock
- 1 tbsp tomato paste
- 2 tbsp hot water
- 1 to 1.5 tbsp dried apple
- 200 ml re-hydrated textured soy protein
- 2 small boiled potatoes
- 2 tbsp cooked rice
- 2 mushrooms fried (mushroom paste)
- 1 small onion chopped and fried in oil (softened)
- 2 tbsp quick oats
- 1 tbsp bread crumbs
- 1 tsp smoked salt
- 1/4 tsp allspice powder
- 3 tbsp egg replacement
- 2 tbsp oil
- 2 tbsp soy powder (or soy protein)
- Combine 1 tbsp of mushroom powder, half a cube of not-beef stock and 1 tbsp of tomato paste in a cup.
- Add 2 tbsp of hot water before mixing them and let it set on the counter.
- Chop a dried apple slice into small pieces.
- Rehydrate 1 cup of TVP or textured vegetable protein in hot water.
- Boil 2 small potatoes and 2 spoons of rice.
- Cut 2 mushrooms and a small onion into small pieces and fry them in a little bit of oil until softened.
- Mash the potatoes and add 2 tbsp of cooked rice, fried mushrooms and onion, and dried apple.
- Mix the ingredients and add 2 tbsp of quick oats, 1 tbsp of bread crumbs, and 1 tsp of smoked salt.
- Add quarter a tsp of all spice powder and 3 tbsp of egg replacement and mix everything together with the mixture from the cup.
- Add 2 table spoons of oil, 2 cups of rehydrated TVP and 2 tbsp of soy powder.
- Mix everything well.
- Shape the balls with slightly wet hands and steam them for about 30 min.
- Let the meatballs cool down inside the steamer after they're done so they don't break apart.
- Once the meatballs have rested, you can eat them directly, freeze them, fry in oil, bake in the oven, or add them to your favorite sauce.
If you're using the pea paste explained in the video, replace the TVP and soy powder with 4 tbsp of pea paste.
Pea paste
- Soak the pea powder in water for a couple of hours.
- Replace the water and mix it in a blender for a couple of minutes.
- Let the mixture split and drain the water on top and end up with pea paste.
- Add 4 tbsp of pea paste instead of the TVP and soy powder.
- Shape the balls and steam them in the same way.
- Once the meatballs have rested, you can eat them directly, freeze them, fry in oil, bake in the oven, or add them to your favorite sauce.
